Whole Wheat Pancakes




Whole Wheat Pancakes originally from Lane's Letters

2 c. unbleached bread flour
2 c. whole wheat flour
2 c. milk
2 c. buttermilk
4 eggs
2 T. baking powder
1 t. salt
2/3 c. oil
1/4 c. brown sugar ( I used 2/3 cup)
Mix first 4 ingredients together. Beat for 4 minutes. Add remaining ingredients. Mix well.
These were really good and easy. The batter was thiner than I'm used to and the pancakes were somewhat thin. I got 30 pancakes. I ate 4 and froze the rest. I was thinking they would be really good with fruit topping or fruit flavord syrup. I took the pictures myself.
Easy Buttermilk
Add 1T of lemon juice for every cup of milk. Let stand for 5 minutes before adding to recipe. Thats just a tip I picked up somewhere. I never buy buttermilk.

That sounds like a great recipe. It's just the thing I've been looking for--more whole wheat! Fruit syrup would be yummy!
