Cake Flour:
I used cake flour for the first time yestarday. I made a pound cake. The cake turned out so fluffy and moist. I know this is short but thats all I have to say. Buy Cake Flour!

Is it much more expensive than all-purpose flour?
What would the difference be? I grind my own wheat. I am wondering if cake flour is made from pastry wheat, versus hard wheats. The difference there is the gluten content.
Anna- it was only $.25 more than the brand of all-purpose that I buy.
Marci- honestly I don't know. All I can say is I could see and taste the difference in the cake. The texture is better.
Hi Bethanie, I just made a chocolate pound cake using Paula Deen's recipe for my husband's birthday. Chocolate pound cake is his favorite cake. I will have to try the cake flour next time. It turned out pretty good with regular flour, but I've been wondering about using cake flour. Thanks for the tip!
